Dennis B. Valcich was born on a small family island Osljak on Dalmatian coast of
Croatia.
After finishing one of the best catering schools in Europe, in the ancient city
of Dubrovnik, he migrated to Sydney Australia in 1966.
He worked in number of hotels like Australian, Wentworth, Travelodge and Menzies
as well as number of restaurants like Red Coach and Endeavour.
Dennis also run his own restaurant Riva at two Croatian Clubs, Dalmacija at
Terrey Hills and Jadran Hajduk at St. Johns Park.
Realising how his Australian friends enjoy Croatian cuisine, he decided to
publish first Croatian cookbook in English.
Book was a great success, and because of it, he decided to promote Croatian Food
wine and Tourism festivals across Australia and New Zealand. He appeared on
number of top TV cooking shows in Australia and Croatia, and featured in number
of leading Australian newspapers and radio shows.
The festivals are still going very strong eight years since the first one. He
published second Croatian cookbook, which was sold all around the world.
Dennis was now concentrating on his catering business, and thanks to his old
friend Mr. Jim Bosnjak he had opportunity to cook for number of very high
profile people in Australia. Premier, Prime Ministers present and past, Cabinet
Ministers, Sporting celebrities, overseas guests and well-known business
people, as well as for ordinary people in they homes for they private
functions.
Dennis just released number of quality sauces with his own label “Chef at Home”.
